Most people who haven't taken advanced mathematics will assume the infinity symbol is an 8. As far as quotes I'm not a big fan unless they are an Integral part of an image. I'd take the quote you like the most and figure out an image that would match it. A heart in a cage. A magic hat with stars shooting out of it. A ship going into the horizon.
